The Halloween Candy Cookie

Ingredients

  • ½ c unsalted butter (room temperature)
  • 2/3 c packed brown sugar
  • ¼ c granulated sugar
  • 1 teaspoon vanilla
  • 2 large eggs
  • 1 ¼ cups all purpose flour
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • 1 c cut up candy bars into chunks (leftover from Halloween; like Hershey, Mounds, Reese’s Cups, Malt balls, what could be bad?)
  • 1 c raisins
  • 1 c nuts (pecan, walnuts, your choice)

Directions

Preheat oven to 350 degrees.

Cream butter and sugars with an electric mixer until pale and fluffy.

Add vanilla and eggs (one at a time) mixing until well combined.

Combine flour, salt and baking soda in a bowl and whisk to shift. Add this dry mixture to the butter mixture, mixing until just combined. Stir in raisins, nuts and candy bar chunks.

Place dough 2 inches apart on a cookie sheet using a small ice cream scoop (approx 2 inch balls of dough). I like to use a silpat sheet so they don’t stick.

Bake until golden, about 20 min. Move them to a wire rack to cool.

Eat and smile!
