Recipes from The CUPChorizo and Swiss Quiche
Preheat oven to 350. Spread the chorizo, green onions and ½ of the cheese into the pie crust. In a bowl whisk together evaporated milk, eggs, flour, salt and pepper. Pour this mixture into the pie shell. Top with the remaining cheese. Bake for 45 min or until a knife inserted in the center comes out clean. Cool for about 10 minutes. I like to make this ahead and eat a piece for breakfast or take a piece for lunch.
