Diane's Malted Chip Cookies

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 cup malted milk powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) butter, softened
  • 1/2 cup vegetable shortening
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 3/4 cups Chocolate Chips
  • 1 cup chopped pecans

Directions

Preheat oven to 375° F.

Combine flour, baking powder, baking soda, malted milk powder and salt in medium bowl. Beat butter and vegetable shortening in large mixer bowl on medium speed for 30 seconds. Add granulated sugar, brown sugar, eggs and vanilla extract; beat until well combined. Stir in flour mixture, chips and nuts.
Drop by rounded teaspoon onto ungreased baking sheets.

I use a Silpat baking liner. They are a must and help create perfect cookies...and no mess clean up.
Another tip...I use a small 1 3/4" ice cream scoop with a spring-loaded wire scraper in the bowl. You know, the kind you squeeze and it plops out the contents. Keeps the size even and no messy hands!
Bake for 9 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

Cookies lift off the Silpat easily so you can cool them on a wire rack. I place a paper plate inside a large Zip bag and store them.
